This is probably my favorite chili recipe. It is quick, easy and of course yummy.
2 pounds canned beans or 1 pound dry beans
1 pound ground beef
1 28-oz can diced tomatoes
1 can rotel (tomatoes and green chilis)
1 chopped onion
1 chopped bell pepper
1 clove garlic
2 Tablespoons Chili powder
Salt to taste.
If you are using dry beans, cook the beans until they are soft, drain and rinse. Put the beans in a stock pot with a little bit of water. (You don't need to drain and rinse the canned beans.) Add the tomatoes, rotel and the Chili powder. Turn the burner on and allow the ingredients to boil while you prepare the rest. Brown the ground beef in a frying pan, set aside. Chop the onion and bell pepper. 20 minutes before you eat, put the beef, onion, bell pepper and garlic in the stock pot with the beans and allow to return to a boil. Add salt to taste just before serving.
Sometimes we add fresh cilantro before serving. We usually have cheese and sour cream with it.
For a vegetarian variation, leave out the meat and add some cooked brown rice, or wheat berries or cook up some soybeans with the other beans.
