Food Alternatives and Nutrition Considerations

You can replace sugar with honey. The replacement values are per pound, one pound of honey is equivalent to one pound of sugar. We use honey in our whole wheat bread recipe, so we're planning to store a whole year supply of it in addition to the year supply of sugar. Honey is expensive, so we're taking our time. The shelf life of honey is indefinate. I've heard rumor that 2000 year old honey has been found.

You can also replace shortening with oil. Our family prefers olive oil for some things and canola or vegetable oil for other things. We store a full year of shortening because the shelf life is so long, and about a half of a year of the other oils. We figure that we will be able to stretch them with the shortening if we need too. You'll need 10 quarts of oil for a full year's supply, and the shelf life, if stored in a cool, dark place is two years. Which is a big reason why we also store shortening.


Other nutritional considerations:

Nursing mom: Dry milk increases from 16 pounds to 64 pounds.
Pregnant mom: 48 pounds dry milk.
Child: 48 pounds dry milk
Teenager: Up to 150% of an adult, and 48 pounds dry milk

Storing vitamins are also a good idea, rotate them frequently as the vitamins break down quickly. It isn't essential, but if you use them regularly, you might think about storing some.
